Cracker Candy

I am so excited to share this recipe with you today! It’s one of my all-time favorites. Buttery crackers are topped with a brown sugar mixture, baked, then topped with melted milk chocolate. I don’t think it’s possible to go wrong with that combination!

Let’s jump right in! First, cover a cookie sheet with parchment paper. Lay enough Keebler Club crackers down to cover the bottom in a single layer (usually about 50). Preheat oven to 325 degrees.

In a medium saucepan, bring 1 cup butter and 1 cup brown sugar to a boil over medium heat. Being careful not to let it burn, boil the mixture for three minutes stirring constantly. Then remove from heat and stir in 1/4 tsp. baking powder. Gently pour it over all the crackers. Using a spatula, gently spread it evenly over the whole top.  Put the pan in the oven and bake at 325 degrees for 7 minutes.

When it’s done baking, take the pan out of the oven and sprinkle a 12 oz. bag of milk chocolate chips over the top of crackers.

Let it sit for about a minute, then, using a spatula, spread the melting chocolate completely over the top. This is where you can sprinkle on nuts if you want to…I’m a no-go on nuts but you totally can! I promise, I won’t judge 🙂 In fact, kuddos to you if you do! Nuts are good for you….but I have a crazy fettish to keep my desserts…..desserts…..or a.k.a. the unhealthy stuff I eat after I eat my dinner (and maybe again before bed…..and snack time the next day…..) Geesh. I shouldn’t admit all that. So let’s get the focus back on this “delishiousness”…..ok, not a word. Well, I’ve now made it one 🙂

Put the pan in the fridge for awhile (about an hour or until chocolate hardens back up again). Gently lift the cracker candy away from the parchment paper and break into pieces. I find it easiest to just use my hands to break it apart.

That’s it! Look at all that goodness. Doesn’t it look amazing? Can I get some nods of agreement here?

Cracker Candy

  • Approx. 50 Keebler Club crackers
  • 1 cup brown sugar
  • 1 cup butter
  • 1/4 tsp. baking powder
  • 1 (12 oz.) package of chocolate chips
  • 1 cup chopped nuts (totally optional)

Cover a large cookie sheet with parchment paper. Make a single layer of crackers in pan, completely covering the bottom. Preheat oven to 325 degrees. In a saucepan, melt the brown sugar and butter together on medium heat. Boil for three minutes stirring constantly. Remove from heat and add baking powder. Pour mixture over crackers and bake for 7 minutes. Remove from oven and pour chocolate chips over top to melt. Spread melted chocolate and sprinkle with nuts (if desired). Refrigerate for a bit then break into pieces.
